Usually, the grapes of the Dornfelder varietal are ripe very early in the harvest and will be picked at the beginning of the harvest season. Unlike white wine, the juice of the red grapes is not getting squeezed immediately. First the grapes are getting separated from stems as well as stalks and will be stored afterwards for around 14 days. During this time the grapes are getting mashed again and again to get the colour as well as tannins out of the skin of the grapes.
This is essentiell for a terrific red wine. For the Mosel area and for our winery, typical red wines like our off-dry Dornfelder are fresh as well as elated and have a great fruit. In terms of aging, it is not needed to store our red wines over several years. We and our customers want to have a fresh red wine which can be drunk as soon as it is in the bottle. Our philosophy is to offer red wines to drink and enjoy not just for storing in the cellar. Besides cheese and beef, you should try this Dornfelder to venison, lamb, pasta, pizza and raclette.
