What does the winemaker during the wintertime? When the harvest is over and all grapes are picked, one could think that for the next couple of months there is nothing to do in the vineyard. This assumption would be wrong. Even if the wintertime is not as stressful as the harvest, the work in the vineyard starts again soon after we picked the grapes.
During winter we cut the wood in the vineyard, where the grapes were hanging, back to a minimum at each single vine stock. This work is essential to reduce the quantity of grapes for the coming harvest and is already key for a high quality at the next season. When we come home after a cold day in the vineyard, a palatable red wine in the warm living room is definitely a little highlight. So when it is cold outside, the Dornfelder is a good choice and will warm you up.
